If you love potatoes and spice, you will love this easy-to-make vegan-friendly potato dish. Called Shogo Khatsa in Tibetan or Aloo Dum in Nepali, there are many variations to curried potato across the Himalayas|
INGREDIENT LIST BELOW. This style of curried potato dish is especially popular in Darjeeling, a beautiful little town in India, where I grew up and spent some of the best years of my childhood years. In this video, I will show you: 1. How to make a very easy and delicious curried potato dish with no garlic, onion, or tomatoes 2. How to keep your boiled potato from crumbling 3. How you to make “aloo bhujia” Darjeeling style if you want to try this as a “snack”
INGREDIENTS: 10 medium-sized potatoes (If in the US, use Russet or Yukon Gold) 1 cup vegetable oil 1 tablespoon Panch Phoron (a pre-blend of 5 Indian spices. If in the US, try Indian stores or Amazon) 2 teaspoon turmeric 2 teaspoon paprika 1 teaspoon salt (adjust as per your salt preferences) OPTIONAL: if you want spice Crushed red chili and few dry whole chili peppers OPTIONAL if you want that fiery red color: 1 teaspoon red food coloring (or use 1 tablespoon Kashmiri red chili powder) OPTIONAL: if you want to garnish, use cilantro
